  • 2 tablespoons apple cider
  • 1 teaspoon cinnamon
  • 2 tablespoons butter (melted)

Instructions

  • Prepare the Apple Cider: In a small saucepan, simmer 1 cup of apple cider over medium heat until it reduces to ½ cup. Let it cool.
  • Mix the Dry Ingredients: In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • Cream the Butter and Sugars: In a separate bowl, beat together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 3-4 minutes).
  • Add the Eggs and Vanilla: Beat in the eggs one at a time, then add the vanilla extract and cooled apple cider.
  • Combine Wet and Dry Ingredients: Gradually add the dry ingredients into the wet mixture, mixing until just combined.
  • Bake the Cake: Pour the batter into a greased 9-inch round cake pan and smooth the top. Bake at 350°F (175°C) for 35-40 minutes or until a toothpick inserted comes out clean.
