- Powdered sugar and cornstarch (for coating the marshmallows)
Instructions
- Bloom the gelatin: Add 1/2 cup cold water to your stand mixer bowl. Sprinkle the gelatin over the water and let it sit for 5 minutes to bloom.
- Make the sugar syrup: In a saucepan, combine granulated sugar, light corn syrup, and 1/2 cup of water. Stir over medium heat until sugar dissolves. Bring to a boil and heat until the mixture reaches 240°F (soft-ball stage).
- Combine gelatin and syrup: Carefully pour the hot syrup into the bloomed gelatin while the mixer is on low. Gradually increase the speed to high and whip for 10-12 minutes until light and fluffy.
- Add flavoring: Mix in cotton candy flavoring and vanilla extract.
- Set the marshmallows: Pour the mixture into a greased or parchment-lined pan. Let it set at room temperature for about 4 hours or until firm.
- Cut and coat: Turn the marshmallows out onto a powdered sugar-coated surface and cut them into squares. Dust with a mixture of powdered sugar and cornstarch to prevent sticking.
