Ingredients
2 chicken breasts or thighs (boneless, skinless)
1 cup white rice (or brown rice)
1 ½ cups shredded Mexican blend cheese
1 can (10 oz) tomato sauce
1 cup chicken broth
½ cup sour cream (or Greek yogurt for a healthier option)
1 tsp cumin
1 tsp chili powder
1 tsp garlic powder
1 tsp onion powder
½ tsp paprika
Salt and pepper to taste
1 cup corn kernels (optional)
1 cup black beans (optional)
1 tbsp olive oil (for cooking chicken)
Instructions
Cook the Chicken:
Heat olive oil in a pan over medium-high heat.
Season chicken with salt, pepper, cumin, and chili powder.
Cook for 5-6 minutes per side, or until the internal temperature reaches 165°F (74°C).
Remove from heat, let it rest, and then chop into bite-sized pieces.
Cook the Rice:
In a medium pot, cook rice according to package instructions. Use chicken broth for added flavor instead of water.
Prepare the Casserole:
Preheat the oven to 350°F (175°C).
In a large bowl, combine the cooked rice, chicken, tomato sauce, chicken broth, sour cream, spices, and corn (if using). Stir well.
Transfer the mixture to a greased 9×13-inch casserole dish.
Sprinkle shredded cheese evenly on top.
Bake:
Place the casserole in the oven and bake for 20-25 minutes, or until the cheese is melted and bubbly.
For an extra crispy cheese layer, broil for the last 2-3 minutes.
