Description

The Creamy Mexican Rice & Chicken Casserole is a comforting and flavorful dish that combines tender chicken, fluffy rice, and a creamy, cheesy sauce. It’s a one-pan meal that’s easy to make, loaded with Mexican spices, and perfect for a busy weeknight dinner or a family gathering.

  • 2 chicken breasts or thighs (boneless, skinless)

  • 1 cup white rice (or brown rice)

  • 1 ½ cups shredded Mexican blend cheese

  • 1 can (10 oz) tomato sauce

  • 1 cup chicken broth

  • ½ cup sour cream (or Greek yogurt for a healthier option)

  • 1 tsp cumin

  • 1 tsp chili powder

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • ½ tsp paprika

  • Salt and pepper to taste

  • 1 cup corn kernels (optional)

  • 1 cup black beans (optional)

  • 1 tbsp olive oil (for cooking chicken)


Instructions

  • Cook the Chicken:

    • Heat olive oil in a pan over medium-high heat.

    • Season chicken with salt, pepper, cumin, and chili powder.

    • Cook for 5-6 minutes per side, or until the internal temperature reaches 165°F (74°C).

    • Remove from heat, let it rest, and then chop into bite-sized pieces.

  • Cook the Rice:

    • In a medium pot, cook rice according to package instructions. Use chicken broth for added flavor instead of water.

  • Prepare the Casserole:

    • Preheat the oven to 350°F (175°C).

    • In a large bowl, combine the cooked rice, chicken, tomato sauce, chicken broth, sour cream, spices, and corn (if using). Stir well.

    • Transfer the mixture to a greased 9×13-inch casserole dish.

    • Sprinkle shredded cheese evenly on top.

  • Bake:

    • Place the casserole in the oven and bake for 20-25 minutes, or until the cheese is melted and bubbly.

    • For an extra crispy cheese layer, broil for the last 2-3 minutes.

 

  • Serve:

    • Let the casserole cool for 5 minutes before serving. Enjoy your creamy, cheesy casserole!
