Ingredients
For the Eggs:
6 large eggs
½ teaspoon salt (for boiling)
For the Filling:
3 tablespoons mayonnaise (or Greek yogurt)
1 teaspoon Dijon mustard
½ teaspoon paprika (plus extra for garnish)
½ teaspoon garlic powder
Salt & pepper to taste
For the Crispy Coating:
½ cup breadcrumbs (or almond flour for keto)
1 egg (for coating)
½ teaspoon paprika
½ teaspoon onion powder
Cooking spray or a light brush of olive oil
Instructions
Boil the Eggs – Place eggs in a pot, cover with water, and add salt. Bring to a boil, then simmer for 9-10 minutes. Transfer eggs to an ice bath for easy peeling.
Prepare the Yolk Mixture – Cut eggs in half and remove the yolks. Mash them with mayonnaise, mustard, garlic powder, paprika, salt, and pepper. Mix until smooth.
Coat the Egg Whites – Lightly beat 1 egg. Dip egg whites in the beaten egg, then coat with breadcrumbs or almond flour.
Air Fry the Egg Whites – Preheat the air fryer to 375°F (190°C). Place coated egg whites in the air fryer basket, ensuring they don’t touch. Spray lightly with olive oil. Cook for 6-8 minutes, flipping halfway through.
Assemble – Let the egg whites cool slightly, then pipe or spoon the yolk mixture into each crispy egg half.
Garnish & Serve – Sprinkle with extra paprika or fresh herbs and enjoy immediately!
