Ingredients
4 boneless, skinless chicken thighs
6–8 baby potatoes, halved
2 large carrots, peeled and chopped
4 cloves garlic, minced
1 small onion, chopped
1 cup chicken broth
1 cup heavy cream (or coconut milk for a dairy-free version)
1 tsp dried thyme
1 tsp dried parsley
Salt and pepper, to taste
Instructions
Prep the Ingredients: Place the baby potatoes and chopped carrots at the bottom of the crockpot.
Add the Chicken: Lay the chicken thighs on top of the vegetables.
Mix the Sauce: In a bowl, combine garlic, onion, chicken broth, cream, thyme, parsley, salt, and pepper. Pour over the chicken and vegetables.
Cook: Cover and cook on low for 6–7 hours, or until the chicken is tender and the potatoes are cooked through.
Finish & Serve: Shred the chicken with two forks (if desired), stir the sauce, and serve warm.
