Ingredients

  • 4 boneless, skinless chicken thighs

  • 68 baby potatoes, halved

  • 2 large carrots, peeled and chopped

  • 4 cloves garlic, minced

  • 1 small onion, chopped

  • 1 cup chicken broth

  • 1 cup heavy cream (or coconut milk for a dairy-free version)

  • 1 tsp dried thyme

  • 1 tsp dried parsley

  • Salt and pepper, to taste


Instructions

  • Prep the Ingredients: Place the baby potatoes and chopped carrots at the bottom of the crockpot.

  • Add the Chicken: Lay the chicken thighs on top of the vegetables.

  • Mix the Sauce: In a bowl, combine garlic, onion, chicken broth, cream, thyme, parsley, salt, and pepper. Pour over the chicken and vegetables.

  • Cook: Cover and cook on low for 6–7 hours, or until the chicken is tender and the potatoes are cooked through.

 

  • Finish & Serve: Shred the chicken with two forks (if desired), stir the sauce, and serve warm.
