Description

Healthy Mexican Tuna Salad is a vibrant and nutritious dish that combines fresh ingredients like tuna, avocado, lime, cilantro, and corn. It’s perfect for a light meal that’s both filling and flavorful. With a zesty twist from lime and a touch of heat from jalapeños, this salad is an ideal choice for anyone looking to enjoy a healthy, protein-packed dish with a Mexican flair.

Ingredients

Scale
  • 2 cans of tuna (in water or oil)
  • 1 ripe avocado, chopped
  • 1 lime (juiced)
  • 1/4 cup cilantro, chopped
  • 1/2 cup corn (fresh, frozen, or canned)
  • 1 large tomato, chopped
  • 1 small red onion, finely chopped
  • 12 jalapeños, chopped (optional)
  • Salt and pepper to taste

Instructions

  • Drain and rinse the canned tuna and place it in a large mixing bowl.
  • Add the chopped avocado, cilantro, tomato, and red onion to the bowl.
  • If using, add the jalapeños for a spicy kick.
  • Squeeze the juice of one lime over the mixture and stir gently to combine.
  • Add salt and pepper to taste, adjusting the seasoning as needed.
  • Chill the salad in the refrigerator for about 30 minutes to allow the flavors to meld together.
  • Serve on its own, with tortilla chips, or on a bed of lettuce.

Notes

  • For a richer taste, you can use tuna packed in oil, but for a lighter option, tuna in water is preferred.
  • If you prefer a milder flavor, remove the seeds from the jalapeños before adding them to the salad.
  • This salad can be made ahead of time and stored in the refrigerator for up to 24 hours.
