Description

For the Cupcakes:

  • 1 ½ cups fresh peaches, peeled and diced
  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon cinnamon (optional)
  • ¼ teaspoon salt
  • ½ cup unsalted butter, melted
  • ½ cup honey
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup Greek yogurt (or sour cream)

For the Cream Cheese Frosting:

  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • ¼ cup honey
  • 1 teaspoon vanilla extract
  • 23 cups powdered sugar

Optional Toppings:

  • Fresh peach slices
  • Drizzle of honey
  • Sprinkle of cinnamon

Instructions

1️⃣ Preheat & Prep

  • Preheat oven to 350°F (175°C).
  • Line a 12-cup muffin tin with cupcake liners.
  • Dice the peaches into small pieces.

2️⃣ Mix Dry Ingredients

  • In a bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.

3️⃣ Mix Wet Ingredients

  • In another bowl, whisk melted butter, honey, eggs, vanilla extract, and Greek yogurt until smooth.

4️⃣ Combine Everything

  • Gradually mix the dry ingredients into the wet ingredients.
  • Gently fold in the diced peaches.

5️⃣ Bake the Cupcakes

  • Divide batter into the cupcake liners (¾ full).
  • Bake for 18-22 minutes or until a toothpick inserted comes out clean.
  • Let them cool completely before frosting.

6️⃣ Make the Frosting

  • Beat cream cheese and butter until fluffy.
  • Add honey and vanilla extract, then mix in powdered sugar until smooth.

7️⃣ Frost & Enjoy

  • Spread or pipe frosting onto cooled cupcakes.
  • Garnish with peach slices, honey drizzle, or cinnamon.
