- 1 cup freshly grated mozzarella cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon nutmeg (optional)
- Fresh parsley, chopped (for garnish)
- 12 oz fettuccine pasta (or pasta of choice)
- 1 cup broccoli florets (optional)
Instructions
- Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine pasta according to package instructions. Add the broccoli during the last 2-3 minutes of cooking if using. Drain and set aside.
- Prepare the Chicken: While the pasta is cooking, heat olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt and pepper, and cook for 6-7 minutes per side until golden brown and cooked through. Remove from the skillet and let rest for 5 minutes before slicing into strips or bite-sized pieces.
- Make the Alfredo Sauce: In the same skillet, melt butter over medium heat. Add the minced garlic and chopped onion, cooking for 2-3 minutes until softened and fragrant. Pour in the heavy cream, and bring to a simmer. Stir in Parmesan cheese and mozzarella cheese, cooking until the cheese is melted and the sauce has thickened.
- Combine Pasta, Chicken, and Sauce: Add the cooked pasta and broccoli (if using) to the skillet with the Alfredo sauce. Toss until the pasta is well coated with the sauce. Add the cooked chicken to the pasta, and stir until everything is evenly combined.
- Garnish and Serve: Serve the chicken Alfredo hot, garnished with fresh parsley and an extra sprinkle of Parmesan cheese.
