For the Chicken:

  • 2 boneless, skinless chicken breasts (or thighs for extra juiciness)

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 1 teaspoon garlic powder

  • ½ teaspoon paprika

  • 1 tablespoon olive oil

  • 1 tablespoon butter

For the Pasta & Sauce:

  • 8 ounces pasta (fettuccine, penne, or linguine work best)

  • 3 cloves garlic, minced

  • ½ cup sun-dried tomatoes, chopped

  • 1 cup heavy cream

  • ½ cup chicken broth

  • ½ cup grated Parmesan cheese

  • ½ teaspoon red pepper flakes (optional, for heat)

  • ¼ teaspoon Italian seasoning

  • Salt & pepper to taste


Instructions

  1. Season the Chicken:
    Season the chicken with salt, pepper, garlic powder, and paprika. Heat olive oil and butter in a skillet over medium-high heat. Cook the chicken for 6-7 minutes per side until golden brown and fully cooked. Remove from the pan and let it rest before slicing.

  2. Cook the Pasta:
    Bring a large pot of salted water to a boil. Cook pasta until al dente (about 8-10 minutes). Drain, reserving ½ cup of pasta water for later.

  3. Prepare the Creamy Sauce:
    In the same skillet, sauté garlic for about 30 seconds until fragrant. Add sun-dried tomatoes and stir. Pour in chicken broth to deglaze the pan, followed by heavy cream, Parmesan, red pepper flakes, and Italian seasoning. Simmer for 3-5 minutes until the sauce thickens.

  4. Combine Everything:
    Slice the cooked chicken into strips. Add cooked pasta and chicken into the sauce, tossing everything together until fully coated. Add reserved pasta water if needed for consistency.

Notes

  • Substitutions: Swap sun-dried tomatoes with roasted red peppers or cherry tomatoes for a different flavor profile.

  • For extra creaminess: Add cream cheese or extra Parmesan for a richer sauce.

  • Make it dairy-free: Use coconut milk instead of heavy cream and vegan cheese instead of Parmesan.
