Ingredients

Scale
  • 4 large eggs
  • 1 medium tomato, diced
  • 1/4 cup onion, finely chopped
  • 12 fresh chilies (jalapeño or serrano), finely chopped
  • 2 tablespoons olive oil or vegetable oil
  • 1/2 cup refried beans (optional)
  • 1/2 avocado, sliced
  • 23 warm corn or flour tortillas
  • Fresh cilantro (optional, for garnish)
  • Salsa (green or red) for topping (optional)
  • Salt and pepper to taste

Instructions

  • Prepare the vegetables: Dice the tomato, chop the onion, and finely slice the chili peppers.
  • Cook the vegetables: In a large pan, heat the olive oil over medium heat. Add the onions and sauté for 2-3 minutes until they soften. Add the tomatoes and chilies, and cook for another 3 minutes, until the tomatoes release their juices.
  • Scramble the eggs: Crack the eggs into the pan with the vegetables. Season with salt and pepper. Stir gently to scramble the eggs, and cook until they are just set, about 3-4 minutes.
  • Serve the eggs: On a serving plate, place the warm tortillas. Spoon the scrambled egg mixture on top of the tortillas. Optionally, add refried beans to the plate for extra richness.
  • Garnish: Top the eggs with fresh avocado slices and a spoonful of salsa. Garnish with cilantro if desired.
  • Enjoy: Serve immediately, enjoying the flavorful Mexican egg dish!
