Description

These savory sausage breakfast muffins are the perfect combination of protein, cheese, and veggies all wrapped up in a fluffy, delicious muffin.   • 1 lb (450g) ground sausage (pork, turkey, or plant-based sausage)

  • 6 large eggs

  • 1/4 cup milk (or cream)

  • 1 cup shredded sharp cheddar cheese (or cheese of choice)

  • 1/2 cup diced bell peppers (red, green, or yellow)

  • 1/4 cup chopped green onions or chives

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/2 tsp paprika

  • Salt and pepper to taste

  • Optional: 1/2 cup chopped spinach, mushrooms, or other veggies of choice


Instructions

  • Cook the Sausage: In a skillet over medium heat, cook the sausage, breaking it up with a spatula, until browned and cooked through. Drain excess fat and set aside to cool.

  • Preheat Oven & Prepare Muffin Tin: Preheat the oven to 375°F (190°C). Grease a 12-cup muffin tin or line with silicone liners.

  • Prepare the Egg Mixture: In a large bowl, whisk the eggs, milk, garlic powder, onion powder, paprika, salt, and pepper.

  • Add the Sausage and Veggies: Stir in the cooked sausage, diced bell peppers, green onions, and any optional veggies you’re using.

  • Fill Muffin Tin: Spoon the mixture into the muffin tin, filling each cup about ¾ full. Top with extra cheese if desired.

  • Bake: Bake for 20-25 minutes, or until the muffins are golden and puffed up. Test with a toothpick to ensure they’re fully cooked.

 

  • Cool and Serve: Let the muffins cool for 5 minutes in the tin before transferring them to a wire rack. Serve warm or store for later.
