Ingredients
- 1 ½ cups of crushed graham crackers
- ¼ cup melted butter
- 3 (8 oz) packages of cream cheese, softened
- 1 cup sour cream or heavy cream (depending on your choice)
- 1 ¼ cups granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- Pinch of salt
Instructions
Prepare the crust: Preheat the oven to 325°F (163°C). In a bowl, mix the crushed graham crackers and melted butter. Press into the bottom of a springform pan. Bake for 10 minutes, then set aside to cool.
Make the filling: In a large bowl, beat the cream cheese until smooth. Add the sugar, eggs, vanilla extract, and a pinch of salt. Beat until fully incorporated. Gradually mix in the sour cream or heavy cream.
Bake: Pour the cheesecake filling over the cooled crust. Bake for 55-60 minutes or until the center is almost set. Turn off the oven and let it cool for 1 hour.
Chill: Transfer the cheesecake to the fridge and let it chill for at least 4 hours or overnight.
Serve: Once chilled, remove from the springform pan, slice, and serve with your favorite fruit or toppings!
Notes
- Room temperature ingredients (cream cheese, eggs) make for a smoother batter.
- You can swap the graham cracker crust for a cookie crust for added flavor.
- For an extra creamy texture, use heavy cream in place of sour cream.
- Top with fresh berries, caramel, or chocolate sauce for variety!
