Instructions
Step 1: Prepare the Dough
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the oats, flour, baking soda, cinnamon, and salt.
- In a large mixing bowl, beat the butter, brown sugar, and honey until creamy.
- Add the egg and vanilla extract, mixing until smooth.
- Gradually add the dry ingredients to the wet mixture, stirring until combined.
- Gently fold in the freeze-dried strawberries.
Step 2: Bake the Cookies
- Scoop tablespoon-sized portions of dough onto the baking sheet, spacing them 2 inches apart.
- Bake for 10–12 minutes, or until the edges turn golden brown.
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
Step 3: Make the Strawberry Icing
- In a small bowl, whisk together the powdered sugar, strawberry puree, milk, and vanilla extract until smooth.
- Adjust the consistency by adding more milk (if too thick) or more sugar (if too thin).
Step 4: Ice the Cookies
- Once the cookies are completely cool, drizzle or dip them in the strawberry icing.
- Let the icing set for about 15–20 minutes before serving.
