  • ½ cup brown sugar
  • ¼ cup honey
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup freeze-dried strawberries, crushed

For the Strawberry Icing:

 

  • 1 cup powdered sugar
  • 2 tablespoons strawberry puree
  • 1 tablespoon milk
  • ½ teaspoon vanilla extract

Instructions

Step 1: Prepare the Dough

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the oats, flour, baking soda, cinnamon, and salt.
  3. In a large mixing bowl, beat the butter, brown sugar, and honey until creamy.
  4. Add the egg and vanilla extract, mixing until smooth.
  5. Gradually add the dry ingredients to the wet mixture, stirring until combined.
  6. Gently fold in the freeze-dried strawberries.

Step 2: Bake the Cookies

  1. Scoop tablespoon-sized portions of dough onto the baking sheet, spacing them 2 inches apart.
  2. Bake for 10–12 minutes, or until the edges turn golden brown.
  3. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.

Step 3: Make the Strawberry Icing

  1. In a small bowl, whisk together the powdered sugar, strawberry puree, milk, and vanilla extract until smooth.
  2. Adjust the consistency by adding more milk (if too thick) or more sugar (if too thin).

Step 4: Ice the Cookies

 

  1. Once the cookies are completely cool, drizzle or dip them in the strawberry icing.
  2. Let the icing set for about 15–20 minutes before serving.
