  • 1 tablespoon lime juice
  • 2 tablespoons chopped fresh cilantro

Optional Toppings:

  • Sliced avocado
  • Salsa or pico de gallo
  • Sour cream
  • Extra cheese

Instructions

  • Marinate & Cook Chicken:

    • In a bowl, mix olive oil, chili powder, garlic powder, cumin, salt, black pepper, and lime juice.
    • Coat the chicken with the marinade and let it sit for at least 15 minutes.
    • Grill over medium heat for 5-7 minutes per side until fully cooked.
    • Let the chicken rest before slicing.
  • Prepare the Rice:

    • In a mixing bowl, combine cooked rice, lime juice, chopped cilantro, and salt.
    • Stir well and set aside.
  • Make the Street Corn Mixture:

    • If using fresh corn, char it in a dry skillet over high heat for 2-3 minutes.
    • In a bowl, mix corn with mayonnaise, crumbled cheese, chili powder, smoked paprika, lime juice, and cilantro.
  • Assemble the Bowl:
