Ingredients
1 lb ground beef (or chicken for a leaner option)
1 packet taco seasoning (or homemade)
1 can refried beans
1 can diced tomatoes, drained
1 cup corn kernels (optional)
6–8 small flour tortillas
2 cups shredded cheddar cheese
1 cup shredded mozzarella cheese
1/2 cup sour cream (for serving)
Fresh cilantro, chopped (for garnish)
Jalapeño slices (optional, for garnish)
Instructions
Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray or olive oil.
Cook the ground beef in a large skillet over medium heat, breaking it up with a spoon. Add taco seasoning and diced tomatoes, and stir to combine. Simmer for 5 minutes to let the flavors meld together.
Layer the taco lasagna: Spread a thin layer of refried beans at the bottom of the baking dish. Top with a layer of tortillas, followed by half of the seasoned beef mixture, and a handful of cheddar and mozzarella cheese.
Repeat the layering: Add another layer of tortillas, then the remaining beef mixture, followed by more cheese.
Bake the lasagna in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly, and the edges of the tortillas are slightly crispy.
Cool and serve: Let the lasagna cool for 5-10 minutes before cutting into squares. Serve with sour cream, chopped cilantro, and jalapeño slices if desired.
Notes
Substitutions: You can swap the ground beef for ground turkey, chicken, or even vegetarian crumbles for a meatless version.
Extra Tips: Add some black beans or corn for extra texture and flavor. If you like it spicy, use spicy taco seasoning or add hot sauce to the beef mixture.
