Description

This Taco Lasagna recipe combines all your favorite taco flavors in a deliciously layered casserole form. With seasoned ground beef, refried beans, melted cheese, and crispy tortillas, this dish is a fun and hearty twist on traditional lasagna. Perfect for a family meal or for entertaining guests!

  • 1 lb ground beef (or chicken for a leaner option)

  • 1 packet taco seasoning (or homemade)

  • 1 can refried beans

  • 1 can diced tomatoes, drained

  • 1 cup corn kernels (optional)

  • 68 small flour tortillas

  • 2 cups shredded cheddar cheese

  • 1 cup shredded mozzarella cheese

  • 1/2 cup sour cream (for serving)

  • Fresh cilantro, chopped (for garnish)

  • Jalapeño slices (optional, for garnish)


Instructions

  • Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray or olive oil.

  • Cook the ground beef in a large skillet over medium heat, breaking it up with a spoon. Add taco seasoning and diced tomatoes, and stir to combine. Simmer for 5 minutes to let the flavors meld together.

  • Layer the taco lasagna: Spread a thin layer of refried beans at the bottom of the baking dish. Top with a layer of tortillas, followed by half of the seasoned beef mixture, and a handful of cheddar and mozzarella cheese.

  • Repeat the layering: Add another layer of tortillas, then the remaining beef mixture, followed by more cheese.

  • Bake the lasagna in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly, and the edges of the tortillas are slightly crispy.

 

  • Cool and serve: Let the lasagna cool for 5-10 minutes before cutting into squares. Serve with sour cream, chopped cilantro, and jalapeño slices if desired.

Notes

  • Substitutions: You can swap the ground beef for ground turkey, chicken, or even vegetarian crumbles for a meatless version.

  • Extra Tips: Add some black beans or corn for extra texture and flavor. If you like it spicy, use spicy taco seasoning or add hot sauce to the beef mixture.

 

  • Make Ahead: Taco lasagna can be assembled a day ahead and baked when you’re ready to serve. It’s also great for leftovers!
